Jau Gok filling is made of crushed fried peanuts, white sugar, fried sesame seeds, and shredded coconut, mixed in somewhat equal measures. The filling is placed into the dough piece, and rounded by hand into a crescent-moon shape, with rounded edges and closed at the top with a pinch into a twisted pattern.
